Ingredients

4 cups oats
2 tsp cinnamon
1/2 cup pure maple syrup
1/3 cup olive oil
3/2 tsp vanilla extract

Directions

  1. Preheat oven to 325 F
    • Prepare a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine all ingredients. Stir to coat well.
  3. Transfer oatmeal mixture to prepared baking sheet.
    • Spread out into an even layer, pressing down to compress the mixture.
  4. Bake for 35-40 minutes
    • Remove from oven and cool, untouched, for 45 minutes
    • Break into pieces
    • Store in an airtight container for up to 2 weeks.
