1 cup basmati rice
200 g green beans, chopped into 2.5 cm pieces
3 shallots, coarsely chopped
olive oil
kosher salt
454 g ground beef
15 g ginger, grated
15 g garlic, minced
200 g spinach, coarsely chopped
50 g oyster sauce
25 g fish sauce
25 g soy sauce
50 g beef stock or chicken stock
25 g brown sugar
15 g basil

Directions

  1. Cook rice according to instructions.
  2. While the rice is cooking, heat the wok over high heat, or skillet over medium-high.
    1. Add in olive oil, then sear green beans with salt for 2 min.
    2. Set beans aside.
  3. While the beef is cooking, combine oyster sauce, fish sauce, soy sauce, stock, and brown sugar, then set aside.
  4. Add more oil, then add the ground beef and salt, crumbling into pea-sized pieces and cook until browned.
    1. Add in shallots and sautee for 2 min.
    2. Occasionally splash with water to soften the shallets.
  5. Add in garlic and ginger, stir to combine, and sautee for 1 min.
  6. Add in spinach and add the beans back in, cooking to reduce the spinach in size.
  7. Add the sauce around the edge of the wok and simmer for 2 min.
  8. Thinly dice the basil, then add to the pan and stir to combine.
  9. To serve, plate the rice then coat with beef mixture.
