Tomato-braised tilapia

Ingredients

4 filets tilapia
1/4 tsp salt
1 Tbsp lemon juice
2 Tbsp olive oil
1 red onion, chopped
10 oz diced tomatoes
3/4 cup roasted red peppers, chopped
1/2 cup vegetable broth
1/4 cup tomato paste
1 tsp oregano
1 cup Jasmine rice, uncooked

Directions

  1. Sprinkle fillets with seasoned salt and drizzle with lemon juice
  2. Cook rice according to instructions
  3. In a large skillet, heat oil over medium-high heat
    1. Add onion; cook and stir until tender
    2. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano
    3. Cook and stir 2 - 3 min
  4. Place fillets over tomato mixture; cook, covered, 6-8 min or until fish flakes easily with a fork
